IslandSlice Rum brings the authentic flavours of the Caribbean to Scotland from our distillery in Dumbarton - affectionately known as "Rumbarton." Founded by Sylvester Herman, a fourth-generation rum maker from St. Lucia, IslandSlice crafts traditional Caribbean rums using methods passed down through generations. Our rum-making process honours the heritage of those who first developed rum in the Caribbean. Using traditional "muck and dunder" fermentation and a combination of column and pot still distillation, we create spirits that capture the true essence of Caribbean rum.
